Peach-Nectarine-Banana-Gin Jam


334 grams peach (2 overripe peaches), 387grams nectarine (4 overripe nectarines), 67 grams banana (half banana), 200 grams preserving sugar 2:1, 400 grams preserving sugar 1:1, juice of 1 lemon, stirring and cooking for about 14 minutes, during the last 2 minutes add the 8 tbsp Gin to the mixture.
